This is my recipe, not from any cookbook specifically. This sautéed greens recipe is an excellent way to use up kale, beet greens, chard, and other leafy greens!

Sautéed Greens Recipe

Ingredients
  

  • 2 large bunches greens such as kale, beet greens, chard, or a mixture of greens
  • 1 medium onion sliced thin
  • 4 cloves fresh garlic sliced or minced
  • 2 Tbsp. olive oil
  • 1/4 cup balsamic vinegar
  • 4 oz feta cheese
  • fresh cracked pepper

Instructions
 

  • Wash and chop greens of choice. Set aside.
  • In a large pan, heat olive oil. Sauté onion in olive oil until soft. Add garlic. Sauté for 1 minute.
  • Add greens and balsamic vinegar. Stir.
  • Place lid on pan and let the greens steam. Stir occasionally. Cook until greens are soft, about 5-10 minutes.
  • Remove from heat. Add feta cheese and pepper. Toss and serve hot.
