Also known as “French spinach”, this stunning green is not only delicious when used as a savory type of “spinach”, but it’s also a beautiful ornamental. It originated in Egypt and Europe as a favorite cold season crop. In addition to being eaten, the leaves have been used as a medicinal and the seeds can be used to make blue dye or even flour!
