These gourmet greens thrive in cool weather. It will be one of the first greens of spring if left in the garden to reseed. Arugula’s oakleaf-shaped leaves grow in a loose bunch and taste peppery. The edible flowers make an attractive garnish and add flavor also.

Greens – Arugula – Eruca sativa

Soil & Water: Arugula likes moderately fertile soils with plenty of added organic matter and a pH of 6.0-7.0. Water moderately and evenly.

Planting & Growing: Sow seeds indoors fall to spring, or sow seeds directly as soon as soil can be worked. Plant every 2 weeks for a continuous harvest for as long as cool weather lasts. Begin planting again in fall for fall and winter harvests.

Harvesting & Storage: Continuous harvest of young leaves stimulates further leaf production. The flowers are also edible but gather them before opening to prevent reseeding, or allow flowers to go to seed for a hearty reappearance in early spring.
