Description
Hyssop is a gorgeous plant, producing woody stems, small leaves, and violet-blue colored floors. It provides a strong aroma and bitter/minty flavor and has been used for flavoring pork, chicken, and other main dishes, plus it is used medicinally. Even the pollinators love this plant! (Note: This is not the same plant as anise hyssop.)

Soil & Water: Hyssop likes sunny conditions and grows best in well-drained soil. It can tolerate some drought conditions.
Planting & Growing: Direct sow hyssop seeds and provide adequate water and moisture. Cut back in the fall.
Harvesting & Storage: Harvest leaves just as flowers begin to open. You can also dry this herb for future use.
